Cabra Beira Baixa
“CA-bra BY-RUH BYE-sha” (Raw - Goat)
This semi-soft goats milk cheese is made in the central region of Portugal and is aged for 60 days. The paste is characteristically yellow with small irregular eyes throughout. Tasting notes are acidic, grassy, floral, and mildly nutty. Pairs well with fig jam and white wines.
São Jorge
“Sao Zhorge” (Raw - Cow)
Milk for this raw cheese is hand milked from a herd of 20,000 cows that graze on grasses overlooking the azure waters. It is aged for 4 months, creating a buttery semi hard wheel. Similar to a cheddar but with tangy and spicy undertones.
Serra Da Estrela
"SEHR-ah dah eh-STREH-la" (Raw - Sheep)
Dating back to the 12th century, this is Portugal's oldest cheese. Made from the milk of Bordaleira ewes, it's known for its pungent flavors and aromas. The paste is buttery and rich with a sour and barnyardy flavor. Pairs well with wines from the Dão region.
